I went to a friends home for a casual BBQ dinner. Amongst the fine wine, laughter and cheese to start the night off he had this infusing in the fridge. So he fired up the BBQ a few metres away from the outside table then threw some of these on to cook. Oh My Goodness! The most delicious smell slowly wafted towards me. When I began to salivate uncontrollably my head turned so quickly I think it spun around a few times. “What is that” I yelled out through my drool.

The taste once plated up is A-Mazing. So not sure whether this is for the whole world to know, but I just have to share it. I may even drop by if you are going to cook it!

8 red long chillies

3 stalks of lemon grass

3 eschallots

Coriander roots and stem

5cm of ginger

1 garlic bulb

Ground coriander 1 tbspoon

100ml sesame oil

2x  270ml coconut cream

Make pastes

 

Add with chopped chicken 5 large breast

4 kaffire lime leaves

50 ml soya

50ml fish sauce

Rock salt

 

Marinate for 24 hrs and cook with BBQ
