Those close to me know I am a chilli sauce fanatic, so here is my version of this chilli oil…

Step 1: Dry ingredients: Place all these in a bowl to pour into warm oil later…..

  • 1 cup dehydrated chilli flakes (in the video I dehydrated and placed in a processor but you can buy the ready made stuff)
  • 1 table spoon of sugar
  • 1 teaspoon of five spice (you can add more at end when you taste test)
  • 1 table spoon of pepper
  • 1 table spoon of garlic
  • 1 teaspoon of salt

Step 2: Oil ingredients: Place all this into a wok and simmer for 20 minutes, then remove/scoop all items from oil and turn off heat. Let oil cool down for a few minutes then drop in the dry ingredients and stir for a minute to avoid any of it burning.

  • 1.5 cups of peanut oil
  • Thumb size piece of ginger sliced
  • 8 x whole cloves
  • 4  x Star Anise 
  • 4 x bay leaves
  • 2 x sticks of cinnamon
  • 1/2 sliced onion (which i ate after removing at end, so yum and crispy)

Step 3: Once all stirred in, add a good “glug” of Sesame oil. Taste test, add more salt, five spice or sugar according to your pallet. Let cool then place in jars, add some more peanut oil if needed to ensure all dried chilli is covered. I also placed the cinnamon stick into the jar for looks and and added flavour (not to eat).
