We are in the car after a super busy day at work on a Friday. You know those days where you have just gotten so much done, brain firing on all cylinders and you’re go, go, go! Britt turns to me and says “I’m going to make a frozen Coconut Limeade tonight. So I say, okay that sounds great. Umm, well after trying this it doesn’t sound great, it’s tastes friggin amazing!
So I am passing my blog description over to Britt, so she can share her recipe and maybe even tell a story…
I guess that now means I have to tell you how I found this recipe!
I follow a food blog called Smitten Kitchen. Not only do I want to move in with her because she lives in New York, I want her to cook for me for the rest of my life. Yumminess comes out of her kitchen every day and this time she decided to post the most refreshing sounding drink with two of my favourite ingredients, coconut and lime. Our lime tree is flourishing at present and I have been needing to do something with them…yesterday!!! I have been baking my little heart out and this time a beverage needed to be had.
Frozen Coconut Limeade
2 & half cups of ice
1 cup of coconut milk
Third of cup of fresh lime juice
3 tablespoons of superfine sugar
2 shots of Malibu (I did 2 x 3 second pours, I don’t measure my alcohol)
Blend all the ingredient in a blender and serve in cocktail glass.
